Uniswap protocol is designed as an open-source project with no traditional control structures, allowing developers to create 100% open source trading bots and programs, without interference from intermediaries or middlemen.
Decentralized exchanges like Uniswap allow traders to feel more safe, without having to trust exchange operators with their funds. There is also no risk of government asset seizure, as decentralized exchange does not actually hold private keys at any point and would not be able to arrest user funds even if asked by authorities.
